This wine is fresh and crisp, possessing a wonderful balance of acidity, a touch of sweetness, and a rich texture. The aromas are classic; pear, white peach, green melon and a hint of fresh bread. The palate carries sweet stone fruits, green apple, and a very fine mouse that keeps this wine refreshing, and imminently drinkable. It finishes with a hint of lime pith, lemon curd, and chalk. It is a perfect wine for all food pairings, and any celebration.
45% Pinot Noir, 42% Chardonnay, 13% Pinot Meunier. The cuvée was bottled with a dosage of special sparkling wine yeast and allowed to ferment in the bottle. Bottled in 2015, this wine has been “on the yeast” in the bottle. The wine develops the classic rich texture and refined “sparkle” that comes from this “Methode Champenoise” technique. delicate floral and peach aromas with a round and creamy mouthfeel with elegant flavors and well-balanced crispness.
